I'm trying to drag out my primary and secondary fermentations a bit longer than I normally do....what do you think will happen?

Lager for 3 weeks in Primary at 55 degrees F

Ale in secondary for 3 weeks at approx. 70 degrees F

Normally I'd do both for 2 weeks.

You'll get better tasting beer. Patience is one of the hardest brewing skills to learn. Personally I have eliminated secondaries for most of my beers. I ferment ales for 3-4 weeks and lagers 4-6 weeks in the primary. Really big beers go to a secondary for 2-3 months of bulk conditioning.
