i just bottle and carbonate like a newb.

corn sugar or whatever to prime it and i just shove it in some bottles.

i've been waiting 3 weeks for it to carbonate...

is that too long? or too short.

they're definitely carbonated after 3 weeks but could i open them sooner?

It takes about 42 months. Better just put em in a closet and forget about 'em. :D

Actually, it just takes a couple weeks, and they're drinkable.

But put a couple sixers away for a few months to let the beer condition a little.

3 Weeks is the minimum to get the beer to an acceptable level in my experience, so you can have a couple but as above, put some aside for longer, I'd let those ones age at least another 4 weeks
