Sanity check!

My goal is a hoppy/citrus American Wheat grain to glass in three weeks. I'd appreciate any feedback! :mug:

Fermentation 12 days @ 65 F
Cold crash 3 days @ 45 F
Keg condition 6 days @ 45 F

Style: American Wheat, medium body
Batch Size: 5.50 gal
Color: 4.1 SRM
Bitterness: 27.2 IBUs
Boil Time: 60 min
Est OG: 1.053
Est FG: 1.011 SG
ABV: 5.5%

Yeast
American Wheat Ale (Wyeast #1010)

Grain Bill
[58.5%] 6 lbs White Wheat Malt
[39.0%] 4 lbs Pale Malt (US 2 Row)
[02.4%] 4 oz Honey Malt

Hop Additions
60 min - 0.25 oz Amarillo
15 min - 0.50 oz Amarillo
10 min - 0.50 oz Amarillo
05 min - 1.00 oz Amarillo
00 min - 1.00 oz Citra (flameout)

Spices
05 min - 0.25 oz Orange Peel, Bitter
05 min - 0.25 oz Orange Peel, Sweet
05 min - 0.25 oz Coriander Seed
 
More time for the cold crash as it take 24 hours just to chill, say three four days, steal one day from the front, and a day from the rear.

Looks good. Despite the name I get more melon from Citra, perhaps cascade or sorachi ace, they seem more citrusy to me.
 
Cold crash is more effective at colder temps, just above freezing really drops the beer clear.

Fermentation 12 days @ 65 F
Cold crash 3 days @ 34 F
Keg condition 6 days @ 34F to 45 F

Likely have to force carbonate above serving pressure...roughly 20-30 psi for 24-36 hours.
