First Apfelwein batch. used 5 gal apple juice 2 lbs brown sugar and montrachet.

total time in fermenter 7 weeks and 4 days
OG ???
SG 2 weeks and 2 days ago 1.003
SG yesterday 1.003

Its bubbling every 1 minute exactly.
 
It is not ready yet if its bubbling... Your FG should be below 1.000 so your not far off.
Edit: Check that...I'm not sure if Brown Sugar is 100% fermentable or not so your FG may vary.

You want to give it enough time to clear.
Mine fermented for about 30 days.
If it's cloudy now it's not done, it will be as clear as apple juice when it's fully done.

When I extract samples it is very clear. When looking at the carboy I can see my hand on the other side of it and it does look like apple juice, just a tad darker. I would've bottled it tonight if it weren't for that bubbling airlock. Do airlocks ever stop bubbling with apfelwein fermentations?
 
Kind of weird to be bubbling like that after 7 weeks. But mine came out to .996. Wouldn't hurt to bottle it I don't think, but if you can wait do so a bit more.
