How can one tell when your beer is sufficiently carbonated? I bottled mine a week ago and the lowest temp has been 68 all week. Is there a way to tell, other than opening a bottle? Should I give it more time?

It's gets to about 72-73 during the day and then 68 about midnight--for about 6-8 hours.

Here's how I check my bottles:
Drink one after a week. If it's carbonated, drink more.
Repeat each week thereafter.
Be sure to save a few bottles to see how it ages over the course of a few months.
