Not one multi day freeze, lots of recent rain, and ~60° weather has this happening. Should I just pinch them all off as soon as they're long enough?

Yeah, those first ones do some crazy stuff and don't really grow 'normally'. A couple weeks after you knock off all those early shoots that come from the surface buds, a bunch more will eventually come up from buds located lower on the crown and give you a more controlled growth. Happy growing!

I wish i had that problem with my hops. My concern is making sure they survive the winter after a transplant.
