juice wines quick to mature?

Been reading that they can be quick to mature?
Also saw that using a simple store brought pressed grape is good but can be a little uninteresting but by adding one or two different jams you could add more depth of flavour...any tried this?
 
Those are really open ended questions...there are countless ways to make a complex flavour...but there are just as many ways to muddle a nice simple wine. The only way to really learn is through experimentation.

As for maturity with age the tannins taper off and the hotness of the alcohol smooths out. Some wines benefit from aging greatly others do not.

Most kit wine concentrate juices are designed to age a bit faster. I have also heard that pails of pressed juice from your local farmers market can be hit or miss for quality, but I've never tried these.
