31 ft/lbs seems like a lot but one would need to fashion a larger paddle wouldn't you? The paddles that come with it certainly wouldn't mix a great volume so a larger paddle might overwhelm the gear reduction. Kind of hard to know without putting pencil to paper or simply empirically determining. It would be cool is someone tries it though.
 
You can buy other paddles for it AND it's not two speeds like I thought, it has two speed ranges and variable control!

You'd probably want one paddle for Pilsners & one for everything else & maybe one for mixing mortar.
