I cannot answer your question regarding a build, but you could modify a pressure sensing switch with silicone tube and a copper pipe so that it would withstand the heat.

If you are interested, I have a used one of these that I am willing to sell for about 50% of a new one.

I might take you up on that if I can't figure out how to make one.

If you go with a float rather than a pressure sensor, you will likely need a stainless, brass, or copper float. If you go that route, be sure to get a temperature rating. I believe that Honeywell makes stainless ones rated to 90C. I would be concerned that if you exceeded the temperature rating you could end up with some shrapnel.

I have this one mounted to the side of my HLT.

I am actually thinking of a more mechanical switch. I don't have a pump, just use water pressure. I want the water to stream to the HLT when the level drops below a certain point. And to stop flowing when it reaches a certain level. Very much like the toilet mechanism mentioned above, but I am not sure how to find one that is temperature tolerant and can be alter to fit a HLT.
