So yesterday I picked up a 3 gallon carboy. Got a small one to keep for experiementing. With winter comming up I thought I would give some apple cider a shot. I have 3 gallons of pasturized cider at home rite now, picked them up from whole foods.

Heres what Im thinking:
2.5 gallons of pasturized cider
1.5 pounds of brown sugar
Boil a quart of water, disolve sugar, yeast nutrient, irish moss and add 1.5 tsp of cinnamon at 1 min.
Pitch some US-04 for residual sweetness.
Throw a half cup of rum in the bottling bucket.

Please feel free to critique this recipe. Im looking for general feedback.

If you're looking for residual sweetness, try adding a little bit of Crystal malt in with the quart/half gallon of water.

With the brown sugar and juice, it will end up pretty dry - regardless of the yeast that you use.
