IIPA recipe advice/fermentation schedule

Finallizing a IIPA recipe. I like the steeping hops idea and want to try it. Hows this recipe look? Whats a typical fermentation schedule for a IIPA. I was thinking 3 in primary. Cold crash or use gelatin. Transfer and dry hop for 5 days before bottling. Thoughts?

Someone mentioned to me that my FG will be lower than what my beer tools pro program says. It doesn't seem to account for lower gravity using honey, corn sugar ect.

Are you shooting for anything in comparison?

If it were me, I would ditch the crystal malt completely - all it's going to do in an IIPA is compete with the hops. I would even suggest starting a little lower in gravity so that you do ensure a complete fermentation. You want this guy down to the low teens in FG. Even if you start at 1.077 and get down to 1.015, you're around 8% which is a pretty sweet spot for an IIPA. Getting much bigger just chances you not getting the beer dry enough for it to be a great product.

I'd move the 15 minute additions even later - like 10 or 5. Then, I'd try to do two additions of steeping: one right at flame out, and another when the wort is chilled below 170. The latter really helps preserve a resinous quality to the hops.

You can also try dry hopping in stages. 3 oz for 5 days, remove, then another 3 oz or so.

All of this my $0.02 - it looks pretty decent as is.
 
Well I didn't use crystal. Left it at store haha. With my yeast stater it looks like this less than 8 hours later. I messed up OG somehow bc it was way lower.

Sounded like a good recipe. It should definitely be lower than 1.022 FG, but I hope you made a yeast starter!!

3-4 weeks in the primary sounds about right. 7 days dryhop.

The only other thing that I would have suggested, and this is minor, is to either use the LME at flameout (since it is darker) or to exclusively use XL DME.

Let us know how the Apollo comes through. I'm interested in using this hop.
 
Here is the recipe after I revised it. I tried doing a hop stand that was mentioned in BYO. The 1 min additions and 5m extract additions were essentially flameout. I left my crystal at the store and used light DME instead of extra light because they were out. I did make a starter! It was my first one and is going great, the pic says it all after less than 8 hours for very active fermentation. My OG was way lower but I think it was due to me taking a sample from top and not mixing enough.

Original Gravity: 1.083 (1.075 - 1.090)
Terminal Gravity: 1.017 (1.010 - 1.020)
Color: 9.14 (8.0 - 15.0)
Alcohol: 8.75% (7.5% - 10.0%)
Bitterness: 103.5 (60.0 - 120.0)

Ingredients:

2*oz (15.4%) Apollo (19.0%) - added during boil, boiled 30*m

Notes
Make a starter with 2 vials of yeast. See mr. malty for amount of water to boil (1.55L) in 151g DME. Use whirlfloc and yeast nutrient in boil and nutrient in starter. For 1m additions let them steep for 30 minutes then cool wort to 170 and add hops and steep for 15 minutes before cooling wort. Do a 2 stage dry hop. 1 addition in primary for 7 days. Can add gelatin or cold crash. Then rack to secondary for 2nd dry hop addition for 5 days and bottle.

So I dry hopped for 7 days tomorrow and I will transfer to secondary and dry hop again for 5-7 days. My problem is I ordered some custom bottle caps that won't be ready for 2 weeks. Is it ok to take out the hops tomorrow and let the beer sit a week before doing second dry hop? I assume it is ok as I see no harm letting it sit.
 
Entered this into a hombrew contest here in Columbus last weekend. Got third in IPA class. Tasted great. I wish the beer was bottle closer to the competition because the aroma wasn't as powerful as it was a month or so ago.
