1 gallon recipe ideas

i'm looking to make my 1st batch...i'm thinking just a gallon. I've recently acquired more than enough butterbean honey, and i'd also like to use some vanilla beans.
Ive found a few recipes but can't seem to find anything to help me scale down to 1 gallon. I know i need some nutes etc added to the must. can anyone help me put together a viable 1 gallon recipe?

Check out the Leap Year Mead.....It was designed as a 1 gallon to be easy to scale up.
It's roughly...3 # honey, yeast nutrient, and enough water to make a gallon. When you rack, rack onto 2 vanilla beans per gallon.
