I'm looking for a "german wheat" and austin only offers "red or white" Is the white acceptable or is this a specialty grain? Am I overlooking something on their site?
 
hmm... maybe look into a Hefeweizen? I don't think they have them on the AHS website but there are plenty of recipes out there.

I'm looking to make one soon. It'll be my ideal summer beer.
 
Without knowing exactly what you are trying to accomplish, it is nearly impossible to answer your question. Are you simply looking to do a wheat recipe or are looking to use wheat as an ingredient? AHBS has a lot of stuff, but I will likely be a minority here and say that they are far from being impressive in my book... Just order from your LHBS. I find Austin's web site to be difficult to navigate, poorly laid out, and they are extremely overpriced.
