So I am thinking of brewing with pecans. I have read alot about brewing with nuts. I am concerned about the fats/proteins in the nuts. Is it worth it to use actual crushed nuts or should I use extract? Also when should I add ginger? Final question should I use fresh pumpkin or canned? I am planning on using a pumpkin ale recipe and tweaking it. Any suggestions on which recipe is a good one?
 
Nuts are tricky because the oil from the nut will effect the head. Try using a pecan meal in primary it will settle to the bottom and should limit the amount of oils while giving flavor. If your really concerned about the oils then use the extract. I have always added the ginger during the boil. Use fresh pumpkin in primary it is easier to separate it out when racking to secondary.
