Glad to see this continuing. Very helpful!

Here's one for you:
All grain, 80% eff.
No secondary.
Amarillo pellets, all else whole cone.
6.5g preboil, 5.5 post
ABV don't care, II/I PA don't care
Citrus, fruity, with a bit of earthy spice. No dank, no floral, minimal pine.
Amarillo, Citra, Cascade in mind, but also have C-bus, EKG, Willamette, Bravo, Vanguard, Legacy
Munich base, maybe some wheat. Love melanoidin malt.
2565 Kölsch yeast
Malty, low IBU
Balance?: For a comp or "true to style", no; hop spotlight. For me, yes - I don't like bitterness...I like a solid malt presence, relatively dry, with huge hop flavor & aroma, but not mouth-hurts bitterness.
Don't care about color.
I love Grand Teton Brewing Company's hoppy beers - Lost Continent DIPA, Sweetgrass APA.

PS - I won't be offended if you don't want to create this "balanced" not-really-an-IPA recipe. :mug:

Love it. Thanks! Agreed - that looks really tasty! Perfect for the beach (Bette Midler pun, haha).

Hopstand with Vanguard? I like it - what's the reasoning there?

It will provide an earthy/spicy counter-point to the citrusy/fruity dryhop... just as you asked.

You could sub Willamette there if desired for a similar effect.

Awesome. That looks fantastic. I'm planning to brew in 2 weeks or so...I will report back. Thank you.

Read back through your first posts & also love this idea. My twist on whatever you come up with will be to create a Partial-Mash Pale using the final runnings from the mash, I'm hoping with a large grainbill there should be plenty of sugars left to combine with some DME for a light ~4.5ABV Session Ale. Also hoping I can pull out some of the later additions from the IIPA to bitter up the Session.

Here goes:
All-Grain,
estimated efficiency...mash: 85%, overall (beersmith): 67%
60 or 90min boil
Prefer not to secondary (b/c i usually dry-hop in primary)
Prefer Hop Pellets, LHBS makes the rules :(
Start Boil Volume = up to 13gallons
End batch volume = 9gallons
Desired Alcohol of 7-9%
Desired hop aroma, i.e. Citrusy & Floral Nose & Taste along with hints of Spicy/Piney.
No Specific Varities of hops desired.
No Specific Fermentables
Prefer White Labs Liquid Yeast, I have alot of Cali V, but also enjoy East Coast, American, and Reg Cali. Wouldnt be opposed to english or london ale either.
Dont need to avoid specific ingredients
Dont need to specifically use 2-row. 6row, Marris & Pils also all acceptable
Looking for an IIPA
Looking for a slight-medium malty IIPA?
IBUs anywhere from 80-130
Moderate body
Moderate taste
I do think an IIPA should be balanced, it should have ample or heavy aroma, but not something with taste-bud killing bitterness, there should be a good malty backbone to smooth out the beer.
Color is prefered to be in the copper/ dark tan region, an SRM between 6-12,
Favorite IIPAs include Green Flash Imperial, Firestone Walker DoubleJack and Oskar Blues GUBNA.

Thank you in advance Bob! Also if there are 1-2 you have already crafted for others on Hopville that you think I might like, please let me know as I will probably be brewing 2-3 IPA/IIPAs over the summer.

Okay this sounds like a great way to get a new IPA recipe.

Here we go:

All-grain
Mash: 74% Brewhouse: 67%
60 or 90 min. boil
I usually only rack to secondary for dry-hopping, which I love in IPAs
Leaf hops
7.5 gallons for 60 min. boil, 8.12 gallons for 90 min. boil
5.5 gallons end batch volume
7-8% abv
I like floral, dank/marijuana, and citrusy hops aromas. I like fruity and spicy hop flavor in addition to the three mentioned in the aroma answer beforehand. I really like to smell the beer the instant the cap comes off. I guess what I like it a complex and heavy hop flavor and aroma.
I have Nugget, Columbus, Cascade, N. Brewer, Willamette, and E. Kent Goldings
No specific fermentables
I prefer to use Wyeast liquid yeast, but I can get pretty much any variety.
No specific ingredients to avoid
I have Briess 2-row or Great Western Pale Ale Malt, but could get any base malt
I would like an IPA
60-80 IBUs
Moderate body
Dry taste
I think an IPA should be in balance according to style. I believe this means a firm hop bitterness, lots of hop flavor, and lots of hop aroma.
The color is not that important to me, I am all about flavor. I do not want a brown or black IPA though, so probably the upper limit would be somewhere around 15 SRM.
My favorite IPA/IIPAs are Bell's Hopslam, Southern Tier Unearthly IIPA, Bell's Two Hearted Ale, Short's Huma Lupa Licious, Founder's Centennial IPA, Stone Ruination.

Thanks for the recipe work. It will be greatly appreciated and very interesting to see what you come up with.

This recipe fits about 95% of your parameters:

Very much appreciated sir!

I forgot to mention I have the ability to whirlpool in my kettle. Being a big Firestone Walker fan I have been trying to mimick some of their techniques.

Looks like for the Wesley Snipes I would just be whirlpooling (180deg) these?
post-boil 30 mins 1.0oz Amarillo
post-boil 30 mins 2.0oz Centennial
post-boil 30 mins 1.0oz Citra

My second question is, I have never understood the advantages of doing 15-10-5 minute additions seperately, what does the beer gain from this over say just adding all 3 at 10minutes?

I will be brewing it as per your specs, just figured since your the expert & all I would ask.

Thanks again Bob! :rockin:

Doesn't need perfect balance. It depends on what you're looking for. If the "Maltyness" matched the level of IBUs in some IPAs it would be too malty to me.

*Is beer color important to you? Please describe what color you desire.
love those reddish hues in a good IPA

*Please list a few of your favorite IPA/IIPAs.
Sierra Nevada Celebration, Sierra Nevada Torpedo, DFH 60min IPA

*All-Grain

*I believe the the IIPA doesnt need to be balanced.
*Color is not of importance. Would be cool to have a black IIPA.

I haven't found any IPA or IIPA that I am in love with. I like the balance of tropical and dank hops and to not let one over power the other. I have also been looking for a good black IIPA to brew.

The American hops you have on hand are mostly citrusy, floral, and fruity. If you want dankness, you'll have to sub a few of the hops in the recipe with Apollo, Summit, and more Columbus.

Correct. But I would try to shoot for more like 100-150 F over the course of 1/2 hour. Easy way to do this is to use your coil chiller to quickly cool the wort to about 160 F, then add your whirlpool hops, and rely on a slow-working ice bath for the rest of the cooling from 150-ish to 65 F.

My second question is, I have never understood the advantages of doing 15-10-5 minute additions seperately, what does the beer gain from this over say just adding all 3 at 10minutes?

Different layers of hop character. It's like using small portions of Crystal 10, 30, and 60 in combination to build on malt complexity instead of just a large amount of Crystal 10. I usually try to use my high myrcene hops (Citra, Amarillo, Simcoe, etc.) as late as possible in the boil to uphold the aroma, but there are some cases where I will add them at 20-15-10 if I want certain flavors to stand out more than others. Late additions of Citra with a dryhop of Apollo and Summit provide a little bit of tropical fruity complexity to the dank overall character. The dryhop hops will usually dominate the character of the IPA. If you use a major amount of Simcoe in the dryhop, like Schlafly American IPA, you definitely taste the Simcoe as the main point of focus over the Amarillo and Centennial, but those hops are still there in the background.

A tad over 12 lbs. but you can steep the spec. malts in the main kettle while you're mashing the 2-row and Munich...

That looks great. Actually this will give me a chance to try two new techniques I've never tried before (First Wort Hopping, and Post-Boil Hopping).

This one may be quite a challenge to brew. It's sort of a play on Stone 15th.
I would definitely use a big healthy starter...

Thanks for the input on this, sometimes I get stuck in a rut in with my recipes.

I was going to post a recipe request then I realized that this recipe pretty much fit what I was looking for. I was wondering why you have 2-Row malt and German Pils in it. Is it to tweak the color / SRM or does it effect the taste in an appreciable way?

Also, not to get too off topic but is CTZ your bittering hop of choice for American IPAs? I've seen it a lot in your recipes and was just wondering. Thanks!

Pilsener malt is a bit sweeter, grainier, thinner, crisper. It gives some added complexity to an otherwise boring 2-row base. Any difference in color at 10% will be negligible. It's purely a flavor reason and not based on enzymes. It's real subtle and not as strong as something like Munich.

I tend to use the more characterful high alpha bittering hops like Columbus, Summit, and Apollo because I find them to be more versatile. I use all three at any point in the boil or the dryhop without issue in my IPAs. I can't say the same for Nelson Sauvin, Magnum, or Citra. In the recipe above, I actually used Summit to bitter.

Rob - I brewed something very close to your recipe for me.

Except, I skipped the traditional bittering charge and loaded up 7.5oz in the last 10 mins. I'm now a believer in the 150° hopstand...I've never had so much flavor/aroma in a wort & hydro sample before. Thank you.

Thanks and good luck! I believe that your rough hop schedule (no bittering/all late) is the Heady Topper practice.

Session IPA for you.

You could replace them with Galaxy. Matter of fact, they would be a better suit. I'll change it.
