I was reading about how using immersion chillers brings out better hop aromas in the beer. I just don't understand the science behind this(maybe this belongs in the science threads). But it is a technique I guess, what ever, anyone got anything on this?:)
 
The key is to chill the beer as quickly as possible. I do this very effectively with a plate chiller by recirculating (by pump) the chilled wort back into the kettle to cool it all at once. One drawback to this over an immersion chiller is that you need to have a good kettle filter to keep the crap out of the plate chiller.
