Well, summer is waning and my garden full of basil is starting to go to flower. So, I've got to do my obligatory cinnamon-basil (non cinnamon and basil---cinnamon-basil, a basil hybrid that has hints of cinnamon in it) ale. I'm starting with a base of IPA...then adding a bunch of honey malt, because I love the combo of basil and honey. I've tried using honey in beers before, and the honey flavor never comes through, so I've taken to using honey malt. I'm just not sure if 2.5 lbs is too much. Anyone have any thoughts? Thanks!
