I opened a package of Nelson Sauvin hops the other day and new I needed to be drinking something with them in it as soon as possible. The only beer I ever had with Nelson Sauvin is Widmer's Drifter Pale Ale. I have heard good things about Alpine Beer's Nelson Rye; so I decided to make a session type rye focused on Nelson Sauvin.

Going to brew a beer based on this recipe this weekend. Any suggestions or comments from those who have made it on what you would do different.
I am going to use crystal rye in place of the standard crystal.

It turned out well. I rushed the process and had it kegged and carbonated within 2 weeks. It was good, but once it was in the keg for 2 weeks (making it 4 weeks from brew day) it was really delicious! Nelson is really potent, had plenty of hop flavors/aromas. The rye was a little hidden by the British pale malt and Nelson, but when the beer tastes good it all works out.

Also added some gypsum and epsom salt for about 175ppm sulfates.

Yeah I like nelson too but just as you said I find it needs a couple of weeks to sort of mellow before I really enjoy the beers I have made with it. Don't know if that's related to just the beer getting better after a few weeks but I have been able to do other beers/hops with a pretty quick turnaround.
