I don't use a secondary, just do a two week primary then 1 week condition in the cask.

I have dry hopped (in a bag) for the second week.

How do I mix in the finings and when?

Do I stir them in? Or do i carefully pour them in? I hear that i'm not supposed to get much oxygen in the barrel. Also shall i leave the finings in for a week, or just the last 3/4 days?

Thanks

Also - how much sugar do i put in the bottom of barrel for a 24l brew of Real Ale?

I think the point of a real ale is that you don't put any extra sugar in after fermentation? You just let the carbonation produced from fermentation carbonate the beer, right?

What finings are you using?

I've been reading that you put a teaspoon in (5g) just to assist in the development of co2 in the barrel.

I'm using Gelatine finings and am thinking of dropping them in the Primary for the last 3 days of a 2 week ferment before racking into the barrel. DO i stir them in or just drop them in?
