Pitch more yeast?

Hi,

Just did a chocolate porter this weekend, and the OG came out too high, 1.072. Was supposed to be around 1.064, but for several reasons I happened to leave the mash for about 1 hour and 15 minutes.

I made a 1 liter starter from one vial.

Do you guys recommend pitching another vial of yeast? The porter has started fermenting.

And this is because the yeast will already have consumed the Oxygen I put in there?

Well, I hope the white labs 001 yeast will have the maximum attenuation :)
 
1.36L at 90% viability if on a stir plate. if not Mrmalty shows 3 liters with one vial. 1 vial in a 1.072 wort is under pitching if you ask me.
 
You'll be fine... I used to underpitch ALL the time, and I never had off flavors. As long as you've got healthy yeast, and you keep control over your fermentation, there's nothing to worry about in my opinion.
