For circuits? Never used it but heard eagle is the way to go.

There's some free software from several companies. You can go to www.4pcb.com and download theirs (I've never used it). PCB Artist.
Express PCB has their own (again, not used).
I think there is a free version of Eagle schematic capture (not used that either).
I use Orcad Schematic Capture, but that costs $$.
If you are doing simple simple brewing stuff, Visio would work fine.

I used Visio and it was simple enough that I made a legible schematic on the first run...
Sorry, duh. All my computers have it from the MS Office install.
