Hello folks,


I’m looking for a nice Cab blend? Maybe a Cab, merlot, and Sangiovese blend. I was thinking of purchasing the juice next week etc. Does anyone have a nice recipe to share?

From google's description of Villa Antinori:

Blend: 55% Sangiovese, 25% Cabernet Sauvignon, 15% Merlot, 5% Syrah

So, you need 55% sangiovese, 25% cab sav, 15% merlot and 5% syrah.

Once you press and acid adjust, you could probably ferment that pretty well. Hopefully this year is a good vintage. I'd do MLF, of course.

Put cab grapes in a bucket
Ferment

Well, yep. That's it.

Buy grapes, check the acid and brix, crush, ferment a few days, press, put in carboy and airlock. When done, proceed with MLF, and then rack and sulfite. Rack every 60 days when there are lees. That's about it.
