I am going to be brewing a hefewizen in a few days. I need to know what % of the grain bill must be 2-row to convert all the wheat. I want to use the most wheat i can and the smallest amount of 2 row. :) I am also going to use some munich and crystal malts, make it a 7-8ish % abv beer that's a tad darker. YUM!!

I believe that malted wheat has enough diastatic power to convert itself. John Palmer says its diastatic is equal to barley. 70% wheat is the highest I have seen. You may consider rice hulls to prevent a stuck sparge.

You can go 100% wheat malt, but use rice hulls and do a protein rest. Otherwise, it's tarball time.
