Appropriate Hefe Ingredients?

So heres what i've got from a combination of leftovers of previous brews:
Roughly 5lb wheat DME
About 1lb XLDME

Some carapils and a little munich grain,
WLP300 Hefe yeast

1oz sterling
1oz us goldings

SO i'm wondering if these ingredients... in any sort of combination...
would make me a nice little hefe

First off, do you know if it is 100% wheat dme, or a mix?

that sounds good. I might even drop off the carapils. The munich won't hurt. Goldings isn't a traditinoal hop for a hefe. Sterling is a good substitute for Saaz though, so thats right.

While not 100% traditional, I think this would make a good hefe. Others might have different opinions though.
 
yeah thats what i was thinking, i mean i dont have to use everything. i believe the wheat dme is 45% wheat 55% base malt. I was thinking about use 4oz of the munich, and a little carapils for head retention.
 
2 lbs DME in the boil with all of the Sterling. Boil one hour. Add remaining extract late. Cool, ferment, bottle.

Doesn't get any simpler than that!

You think i should just skip the specialty grains all together?
