I love the low cost and ease of dry yeast. Notty, and S04 are my faves but why aren't there more varieties like liquid yeast?

Is it too hard to freeze dry them? Is it a licensing issue?

Liquid yeasts are great but at $7-8 (with ice pack) it adds a lot to the kit costs.

Right on the first try. Most yeast strains cannot survive drying. Manufacturers are finding new ones (dry lager and dry wheat yeasts both hit the market in the last couple years), but the more specialized a yeast is, the more fragile. Think toy poodle vs basic mutt.

With the prices of liquid yeast in comparison with the few dry ones there are, what is the motivation for them to R&D a liquid into a dry version that costs less?

What IS happening is the prices of drys are going up because they can squeeze it out.:(

Different companies. Dry yeast companies only sell dry yeast. More products, more sales. Real simple.
