Is there a way other than forming a llc that you can reserve the rights to a brewery name or once it's out there can anyone gobble it up and make it their own?

Sorry to say, but even and LLC doesn't give you legal rights to anything. If you register it at a trade mark you MIGHT be ok. But that will be an ever more labor intensive process.

So why would I throw it out there for everyone to see if someone could just use it for themselves? Can we trust everyone on here?

I don't think many people treat a arbitrary brewery name as a commodity here. It's not worth anything to most people on here since we're not making a profitable brand out of it, it's just something to describe our brewing room.
