Hefeweizen possibly to a wheat ale

I have a hefe in primary right now, and it is a little too early tell if I'm going to have to do something to it. But basically I pitched the yeast wlp 300 about 20hours ago and still nothing happening. Now I know, especially with liquid strands and since I didn't use a starter, it can take up to like 72 hours or something crazy. This is just a premptive question, but hypothetically if my wlp 300 decides not to ferment I was planning on just pitching a regular ale yeast (muntons gold) to at least get something out of it. Now I'm not a huge fan of a straight wheat ale so would I be able to add lemon or orange zest to it to hopefully get something that I will actually like? If so do I go straight in primary with it or should I boil quart of water with it and add it to the wort?
