Soured a wit with roselare and its been 4-5 months. Tasted today, very mild...taste very interesting..not bad..not great..a little tart. Clove flavor mostly...anyone have exp with this yeast and how long for it to really sour up? Looked kind or gross on top as well...not moldy tho
 
Depends how much sugar was left for the blend to eat. You may need to feed it.
What was your SG and your FG before you pitched the Roselare?
