Guess the subject says it all: Is there any benefit in paying the extra tenner to get Fluoride & Iron analysis on the complete mineral test?

You definitely don't need to know what the fluoride content is and you should have an indication as to the iron content from your own tasting abilities or rust stains on plumbing fixtures. If you don't taste it or see it, there is no need to test for it.

The cheaper test is good enough.

How do you brew in Carmel? Isn't the municipal supply up there softened?

RO is a requirement to brew in Carmel. Yes, the city softens the water supply with ion-exchange and that renders the water unsuitable for brewing use. There is supposedly a brew pub starting up in Carmel soon. I've sent them a message that they need to make sure they are using RO as their base water.
