I just racked my Honey Hefeweizen to my secondary tonight and after taking a gravity reading I noticed I am about 3 points off from my recipe.

I was wondering how many of you hit your FG??? and if not... how many points you usually off???

FYI My hefe's been in my primary since 12-31-06. Here is when I took my gravity readings.

Gravity reading: 12-31-06: 1.050 @ 60 degrees = 1.050 - Racked into primary
Gravity reading: 01-07-07: 1.030 @ 70 degrees = 1.031
Gravity reading: 01-13-07: 1.020 @ 70 degrees = 1.021
Gravity reading: 01-18-07: 1.016 @ 68 degrees = 1.017
Gravity reading: 01-22-07: 1.014 @ 68 degrees = 1.015
Gravity reading: 01-24-07: 1.014 @ 68 degrees = 1.015 - Racked to secondary
 
I only brew extract, but I normally hit my FG within a couple of points.

I don't do secondary, I just leave it in primary for two to three weeks.

So far, so good.
 
Was this all grain? Was your OG right on? Maybe your mash temp was a little high, a little more unfermentable sugar in there... or of your OG was higher, then your FG will be too?

Extract with 1 lb of honey. Original Gravity reading: 12-31-06: 1.050 @ 60 degrees = 1.050 - Racked into primary. OG was off by 1 point (recipe OG = 1.049).
 
You know, Orpheus, when I saw that you'd replied to this, I just KNEW it was going to be something like that. Sheesh. ;)

As for me, I've never precisely hit my FG on any of my beers so far. I've been within a couple points above or below and called it a day. I do extract with steeping grains.
