I'm looking to place an online order for some new supplies and a new extract kit, most likely a Wit beer. I was planning on buying the White Labs liquid yeast to go along with the beer kit. I expect delivery time to be about 3 days and it will be packed in ice. If I refigerate as soon as I get it, can I expect it to be to use if its sitting there for 2 weeks or so? Thanks!

As long as it stays cold you should be fine. If you are really concerned, why not make a starter.
Heck, you should consider making a yeast starter anyway.;)
Homebrewer 99 has been known to use liquid yeast that is over a year old with great success.
