Popped this 6.5 pound Brisket flat on last night at midnight. Hmmm Good.

Easy to do. Wash & pat dry the brisket. Score the fat cap. Rub with mustard. I used Beer & Brats Horseradish mustard from Sam's club. Then sprinke with rub till you can't see the mustard anymore. Wrap in plastic wrap overnight and keep cold till you put on the smoker. Smoke at 210 degrees till it reaches 190 degrees internal. Pull off the smoker and wrap in foil and place in cooler to rest for at least an hour. It will stay hot for 4 hours in a cooler. Slice across the grain and serve with beans & coleslaw.

Here's my spice rub recipe.

4 Tablespoons Kosher Salt
4 Tablespoons Paprika
1 Tablespoon ground black pepper
4 Tablespoons Turbinado Sugar
1 Tablespoon McCormick's Ground Chipotle Pepper
1 teaspoon Cayenne Pepper
1/2 teaspoon Ground Cumin
1 teaspoon Garlic Powder
1 teaspoon Onion Powder

Ain't done yet. Got at least 2 hours to go. I smoke mine for 15 hours on average.

Just cubed a Smithfield Ham steak, chopped a couple of onions and a bunch of cilantro, tossed it in the bean pot with the spices and floated a dried chipotle on top. Hmmmm, Dem beans gonna be good too!
 
I always add 2 pounds of bacon that i fry up in little pieces to my beans. The mexican guy I work with said they were the best charro beans he has ever eaten.
 
Looks great I made a whole packer brisket friday for our office party.

I just used some of the leftover brisket in a batch of dutch oven chili that will be done in the morning.
 
Ed,

Will an egg go all night without any intervention? My ECB needs to be fiddled with every few hours or so. Does it use a water pan for steam?

P.S. I took a six pack of Apfelwein to my parents house for Christmas Eve dinner and they loved it. They put in an order for more.

Ahh, it's almost 11 PM and I'm enjoying a nice glass a clone of Anchor Porter and I'll be putting a fresh brisket on the egg for tomorrow's dinner. The crisp night air with the smell of mesquite and hickory wood smoke is fantastic.
