My first batch is almost 3 weeks old so plan on racking it. I am splitting up the 5 gallons into 3 - 2 gallon water bottles. One will be staight honey mead, one I will add 2 lbs of black berries and the other 2 lbs of blueberries.

question #1 - do I need to add stabilizers to the 2 berry mixes?
#2 - Can I top off with boiled water?

If fermentation is done right now and you do not want to ferment the sugar in the berries then yes add potassium sorbate and crushed camden tablets (Potassium metabisulfate).

#2 - Can I top off with boiled water?

That will dilute the mead. Is that wrong? not really. IMO I would fill the strait mead water bottle to the top and the other just add berries untill you are out of room. Let all of that sit for the next several months and you can probably bottle from there or rack one more time and bottle a couple weeks from there.
