Need help. First mead from "the compleat mead maker." Mambo in your mouth recipe. Made it in April, racked three times, bottled it 3 weeks ago and I heard a lid pop. Sterilized a carboy, poured it all back in. Tonight bottled and 1/2 hour after bottling, damn lids are making noise. Possible variables...bottled into canning jars (just because I had them), and 2.) used a wine back sweetener with potassium in it to back sweeten right before the first bottling. Put 2 Camden tabs crushed in the mead when I re-carboyed it. Tastes good, just do not need bottle bombs. Have been homebrewing for 6 years - this mead can not be more difficult. Thanks for replies.
