I know sanitation is key to brewing but what if I slip up and something non-sanitized slips in or bacteria starts to grow? Am I doing to die or become very sick from drinking it or will it just taste bad? hasn't happened yet, just wondering

Sick? Maybe... that depends on your definition of sick. Nothing SERIOUS will happen, but maybe a little diarrhea or an upset stomach (think drinking a shot of vinegar for the upset stomach part.)

Death? No. There are no deadly pathogens that can live in beer, so you will not die from a spoiled batch.

Your biggest problem will be that it will taste terrible.... so terrible that you will probably not want to drink enough of it to even make you sick.
