Critique first-timer: Partial Mash Vanilla Oatmeal Stout

I'm open to any critique on this partial mash recipe. I'm looking for a breakfast stout- something not super roasty or burnt, but not necessarily crazy sweet either.

Base/Specialty Grain:
2lb Maris Otter
.5lb Chocolate Malt
.5lb Crystal 60
2oz Black Patent
2oz De-Bittered Black
1lb Flaked Oats

Extract:
4lb Dark DME @ 60min

Hops:
1oz Nugget Hops @60min

Extras:
4oz maltodextrin @ 10min
.5lb lactose @ 10min

Secondary:
Split, scrape, and chop 3 madagascar vanilla beans and soak in vodka for a few days. Add to secondary carboy and rack beer on top. Taste every few days then bottle.
 
Should be good. I would go with just two vanilla beans though. What yeast are you planning on using?
