Very excited to hear more about the yeast profile. This is awesome.

The water is from a reservoir filled by glacial stream water so probably very high mineral content, I was thinking that could have been contributing to it as well. The aroma was awesome and fruity and SWMBO and a few others really enjoyed it, but I think they're crazy. Also I've seen elsewhere that the original lager yeast strains come from Patagonia, so maybe the yeast here is just super clean.
 
did you consider trying to harvest yeast from some bottles of local beer?

I was looking to do a wild fermentation, but I could have done that.

Tried some Antares beer last night and it was so refreshing. The RIS and Barleywine we're great and pretty hoppy. Finally headed home after 6 months in south america, I have 4 sacks of malt waiting for me.
