Below is our first attempt to creat and brew our own original recipe, an imperial IPA. I would like the forum to add suggestions and/or opinions about the below recipe.



5.5 gallon with 70% brewhouse effeciency 60 minute boil

10# 2-row pale malt
2# crystal 40L
5# American vienna although beersmith shows only german

all cascade hops
2oz first wort hops
2oz 60 minutes
3oz 45minutes
3oz flame out


IBU 101.5
ABV 7.57
SRM 12.2

OG 1.078
FG 1.020

I will be batch sparging according to beersmith.

Question: need suggestion for a great imperial IPA whitelab yeast and amount. Will not likely do a starter since im brewing this week and dont have time to so might add to containers of whitelabs if suggested. In addition wanted everyone feedback prior to brewing.

you have a lot of bittering hops but no flavor ones. i would suggest you get a high alpha for your fwh like warrior, Chinook, horizon and use that then follow this style hopping sched. as far as yeast pick a clean one and since you are not a starter, which i feel is a mistake. your going to need about 3 packs.

30% Vienna seems like a lot for a DIPA. I agree with Glynn, you can go with a high AA hop at 60, and then move the other additions to 20, 15 & 10. WL001 California Ale should give you good results. I would also mash low, say ~150, to get better attenuation and possibly drop your FG.
 
+ on the mash low, 1.020 is too high a FG for a IIPA. Drop at least half of your crystal malt, it really just blinds the hop profile. Go for predominantly pale 2-row and maybe around 5-10% simple sugar to dry it out and boost the gravity. Also, you will definitely need a yeast starter and if you aren't making one you will need 3-4 vials depending on the viability of the yeast.
 
ok i totally agree and a yeast starter will be done. Still up for grabs the yeast to be used. Sounds like WL001 or WL007 have been the 2 suggestions. Ill also tweek the recipe on beersmith and change the hops around adding a higher alpha for the FWH and follow glens hop schedule. Has does everyone feel about dry hoping with an imperial IPA? Not sure about the vienna if this will make a huge difference in the overall but will consider.

I like the grain bill here more- the original had WAY too much crystal.
As for hopping, I like that but I'd go with more than cascades late in the boil, for complexity and some depth.
