Hello everyone:

Starting a raspberry wheat today, instruction say to add raspberry extract during bottling process....

My initial thought was to add the extract when I rack to the secondary fermentor.....this way I can test the flavor as much as I need to to get it just right...

Any advice I which way to go on this....?

Thanks

If the raspberry extract is the only flavor, i.e., you're not using raspberry puree or whole raspberries, etc., you really don't need to secondary the beer. Most common practice is to add flavor extracts at bottling, perhaps because it's easier to stir the extract into the beer and take samples to taste in your bottling bucket than a carboy. Also, adding the extract closer to bottling time ensures that none of the aroma will be lost.
