What are some good relays?

I am looking into going RIMS in the future and have started gathering information and parts. I have a controller from a Thermolator that IIRC is a LOVE 1600 (?).

I will most likely be building a RIMS tube and will need to control mash temps with it. What sort of relay would be best?

I'm also going to look into using a 5500W 220V heater to boil with, and wonder what would be best to control that, or does it even need a control?

As far as a PID... a general consensus among most of the electric brewers out there is to use Auber Instruments:
