I know this is a newbie question but here goes. I am making a cherry berry mead that calls for Wyeast 4184 which has a tolerance of 11% but I only have Red star wine yeast that is 13% tolerant. The recipe has an ABV of 12%. My question is should I order the wyeast or could I just add a little more honey to preserve the sweetness and have just a little higher ABV with the wine yeast. I am wanting a semi sweet to sweet mead.
