First Hefeweizen attempt - a simple extract recipe cooled to ~68F before pitching the yeast slurry from a 3Liter starter of WLP300. Activity took within 8 hours and is fermenting away like a "normal" ale yeast 24h later.

I expected, however, that I would need a blowoff tube as I had read this yeast can be quite crazy, but there is maybe just 1.5" of krausen and lots of actiivty in the wort itself. Should I be concerned that my fermentation is not going extremely crazy for this strain?

I've brewed a Hefe and a Dunkel with WLP300 within the past month. Neither had crazy blowoffs, but I did attach a blowoff tube just in case.

I just tasted my Hefe after allowing for a week of bottle conditioning (no patience) and it's awesome. Best beer I have made.
