I brewed 10 gallons of a rye saison and fermented with WL 3711. I dont want to keg all 10 gallons of it so I was thinking about splitting it up and experimenting with 5 gallons. I was thinking about throwing it on some mangos and seeing what happens. Id like to maybe sour it some how. Just looking for suggestions as to what you think I should do. This is a just a fun little experiment to see how it comes out.

I like the brett idea... haven't tried it myself yet but would like to. If you wanted to go with something less drastic, I'd dry hop it with some really citrus-y hops, like Centennial, Citra, or even Cascade. I did Cascade in one gallon of my last one just to experiment and it made a huge difference from the non-dry hopped version, I really liked it.
