I made a light lager today. In the pot I put 3.3lb of light malt extract and 6 1/2 cups of corn sugar in 2 gallons of water. After it was done I cooled it in the sink for about ten minutes and then pour it into the fermenting bucket. I added 3 gallons of cold water. I then took a starting gravity and it was 1.022. I then mixed it up a bit and took another reading. It was 1.026. The wort was 85F. Why is it so low?
