I need to make a gallon starter for my upcoming batch. I was wondering if I can use this 2 gallon cooler.

I figure I can keep the top spout open to allow oxygen to get in.

What do you think?
 
Just make sure that you cover the top spout with something like aluminum foil to keep dust from getting in and you should be fine.
 
Cool. I wasn't sure if that spout would let enough oxygen in when I stirred. Was planning on the aluminum foil. Thanks bro!
 
and sanitize the crap out of the spigot area...make sure no bacteria is hiding in there.

Long term, be very careful about scratching the plastic inside the cooler. In a mash tun, it's no big deal, but if you're making a starter in there you really dont want ANY bacteria hiding out in tiny scratches. I think this is why the majority of people use glass flasks that they can directly boil in, easy sanitization of the entire vessel.
