Basic brewing.com has some excellent podcasts, but this podcast on lagers is just excellent. The guest on this topic is Chris Colby, editor of BYO.

This is actually the first time I heard an American home brewer talk about "Spunding", a German brewing technique used to naturally carbonate during a secondary fermentation in a closed fermenter (keg in this case).

I told you it was a good podcast ! Basic brewing has tons of video and audio casts on a variety of subjects. They make for interesting listening and viewing.
