Hi guys

I will be brewing up at Christmas ale one of the next weeks and I have been looking at this pretty classic recipe which I have altered a little bit.

3,5 kg light LME

250 g crystal 75
250 g crystal 120

25 g hallertau 60 min
25 g goldings 30 min
50 g sweet orange peel 10 min

Flameout:

250 g honey
2 cinnamon sticks
1/4 tsp. cloves (crushed)
1/2 tsp allspice
2 tsp vanilla (in secondary)

1 pack Nottinghams dry ale yeast


Any input on this one? It is on purpose that I am not makng it too strong as I fear it will otherwise not have time to mature properly. Does it look good otherwise? Anything you would add?

5 G batch I'm assuming? I would think you could add a little more LME, but like you said you already thought of that. Other than that I think it looks pretty good.
 
Yes, this will be a 5 gallon batch. From what I can see I will get an OG of something like 1.054, not taking the crystal into consideration since I am doing a 5 gallon batch with 7.5 pounds LME or a pound and a half pr. gallon (at 36 points pr. pound pr. gallon). I guess my pounds of crystal all together will then yield around 16-18 points pr. pound pr. gallon so something like and extra 3-4 points giving me 1.057-58 in the end and around 6% alcohol.

But oh wait, the honey will bunk it up further right?
