Whereas brown sugar is brown because it has impurities from the sugar still in it (or sprayed back onto it) candi sugar is refined sugar that is dark because it has been caramelized. I didn’t get much character from the soft candi sugar, the dark candi syrup on the other hand has much more flavor/color and gives results that I’m happier with. What sort of Belgian recipe did you use it in?

The recipe is for an Orval-ish beer. I'm doing this from Memopry so this is 90% accurate.

8.5 LBS German Pilsner
1.5 LBS Caravienne
1 LBS Blond Soft Belgian Candi Sugar

1.25 oz Perle @ 60min
1.25 oz EKG Dry Hop

Ferment with WLP568 Belgian Style Saison Ale Yeast Blend
Pitch in Secondary WLP650 Brettanomyces bruxellensis

Sounds tasty to me, seems like a fine sugar choice for the beer (although cane/corn would have been fine as well). I just did something along the same general lines, 4.5 lbs pils, 2 lbs wheat malt, 2 lbs Vienna to 1.042, 32 IBUs of Saaz with a small addition ~ 10 min, fermenting with 550 and Brett B in primary as I type. Might toss some dry hops in the keg in a couple months when I put it on tap.

Here's the actual beersmith report.
