I have a batch in the primary for 1 week 3 days. Belgain Style White, partial malt kit. It came with Munton's E491 which I used.
Checked the SG today and it is down in the proper range. Instruction sheet says 1.010 - 1.015, mine is at 1.0129.

I want to leave it on the yeast cake as long as I can but I have to leave town for a week this coming Sunday. The way I see it I have 3 options and I need some suggestions....

1) Leave it in the primary til I get back (total time in primary 3 weeks)

2) secondary it before I roll out

3) Bottle it Saturday, 3 days from now if I get consistent SG readings

Sooooo, What would you do???

I'd personally leave it on the yeast cake in the primary for 3 total weeks, and bottle when you get back. The beer should only improve between now and then by sitting in the primary for the extra time.

I typically don't bother bottling or kegging most of my beers before four weeks. So, you'll be fine at 3, and will likely wind up with better beer because of it.

Thanks for the input all... I really kinda' knew what the answer would be....

Why don't they sell PATIENCE at the LBHS?
