So my local fishmonger sells Salmon heads cheap. What can you do with a salmon head? Salmon stock isnt very nice to eat, so maybe in soup? Grilled as is?
 
Make a fish stock or sauce. Smuggle them into the zoo & feed the bears. Leave a couple under the seat in the car of somebody you don't like or want to get even with. Feed them to crows/ravens. Freeze them & give them away on Halloween. :D

Salmon have cheeks too. Not to mention the collars on big fish,the area around the edge of the gill area. Those are just getting popular.

Yupik and Inuit - Stinkheads: fermented salmon heads are popular treats. Fermented in the ground buried under animal skins, wood, moss, etc. to be dug up and eaten later. Our Yupik friends actually bury them in contractor garbage bags. I have tried it once. Definitely an acquired taste that I don't have a lot of desire to work on at this time.
